Christmas & Gingerbread


Just a really quick Christmas greeting and then I'll let you get back to your holiday festivities. What's better then celebrating the holiday with a really delicious gingerbread madeleine? I mean you can't celebrate without the famous gingerbread, even though it may not be in the form of a gingerbread man cookie, but instead it's a cake like French cookie. What could be better?  


So now go make these, drink some eggnog and sing as loudly as you can to some Christmas music. I won't judge. ;)

Gingerbread Madeleines (via Fortune Goodies)
Makes about 1 dozen large madeleines
2 eggs
1/3 cup granulated sugar
1/8 tsp salt
1/2 cup flour
1/4 c melted and cooled butter
1 tsp vanilla
2 tbsp molasses
1/4 tsp pumpkin spice
1/4 tsp ginger

Preheat the oven to 375*F. Butter and flour the madeleine pan. Beat the eggs, sugar and salt together for 5 minutes until smooth and creamy. Add in the vanilla, molasses and spices. Fold in the flour and butter, alternating between the two. Place the batter into each mold, about a tablespoon and a half. Bake for 8-10 minutes or until they spring back to the touch. Carefully loosen each madeleine from the pan and flip them over onto a cooling rack. Eat as is or dust with powdered sugar.
