the best chocolate chip cookie you'll ever eat


People are always on the lookout for the perfect something. Whether it be the perfect man, house, or chocolate chip cookie. Well I have just knocked off one of the those three things for you. This is the perfect chocolate chip cookie recipe and it's the only one that you will ever need. So stop using the recipe off the back of the chocolate chip bag or buying the pre-made dough from the grocery store, because this is one really simple recipe with one unexpected ingredient that will have you saying, "what?!".



I came across this recipe one day on Pinterest and it basically said in the description "best ever chocolate chip cookies". My family loves chocolate chip cookies and to see a recipe that claims it's the best is something that is worth a try at making. When I saw that the recipe didn't use butter but used coconut oil instead, I knew that I just had to use this recipe.



Once the cookies came out of the oven I couldn't even see the difference between these coconut oil chocolate chip cookies vs. the original chocolate chip cookie. They smell the say, taste the same, but the coconut oil ones just happen to be way better. They are softer and chewier on the inside, and the edges have a slight crunch to them. My family has been raving about these and the only complaint that I've gotten from them is that the recipe needs more chocolate chips, but who wouldn't want more chocolate in their cookies? As of now this recipe is now my go-to for chocolate chip cookies. Once you try these, I guarantee that you won't go back!

 Coconut Oil Chocolate Chip Cookies
Makes approx. 1 dozen cookies

3/4 cup brown sugar
1/2 cup coconut oil
1 egg
2 tps vanilla extract
1 tbsp milk
1 1/3 cup all-purpose flour
1 tsp baking soda
2 tsp cornstarch
1/4 tsp salt
1 cup chocolate chips

In a bowl of an electric mixer, place the sugar and softened, not melted, coconut oil and mix until creamy. Add in the egg, vanilla, and milk and mix until well combined. 

In a separate bowl combine the flour, baking soda, cornstarch, and salt and mix together. Gradually add to the wet mixture and mix until fully incorporated. Mix in the chocolate chips.

Place the dough in plastic wrap, and refrigerate for about 45 minutes to an hour to let the coconut oil solidify.

Preheat the oven to 350*F. Place parchment paper on a sheet pan and take the refrigerated dough and shape into rounds. Place the cookie dough on the sheet pan and bake for 10-12 minutes, or until light golden brown. Let cool and enjoy!
