Chocolate + Peppermint Cookies


The holidays are officially over until all of the major chain stores decides to put out the Valentine's day stuff. And let's face it, they already put that stuff out. Yet we still tend to have a little bit of the leftover Christmas candy, do we not? Such as the infamous candy cane.


I found this delicious cookie recipe featuring chocolate, more chocolate, and candy canes. What's better then getting rid of leftover candy canes then by putting them into a chocolate cookie?! This cookie is definitely one of my new favorites, and hopefully it'll be one of yours too.

Chocolate + Peppermint Cookies (via Minimalist Baker)
Makes 1 dozen cookies
1 stick unsalted butter
3/4 c sugar
1 egg
1/4 tsp peppermint extract
1 1/4 c flour
1/3 c cocoa powder
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 candy cane, finely crushed
half bag chocolate chips

Preheat oven to 350*F. Cream the butter and the sugar until light and fluffy, about 3 minutes. Add the egg and peppermint extract. In a separate bowl combine all of the dry ingredients and gradually add to the wet mixture. Mix until fully combined. Add in the chocolate chips. Roll the dough into small balls, about a heaping tablespoon in size. Bake for about 10-12 minutes. Once taken out of the oven sprinkle the crushed candy cane on top. Let fully cool and store in an airtight container.
